Craving for a filling snack but bored of the usual burgers and pastries routine? Why not get a bite of our own dosa, albeit with some stuffings? Pick from a multitude of veg and non-veg dosas at the ongoing Spicy Dosa fest at the Cafe Canopy, Abad Plaza, M G Road, where you are sure to be floored by the sheer variety offered. If you are in the mood for something crisp and light, go for the cheese paper roast, which has a light smattering of cheese and pepper on the inside of a crisp dosa. “The temperature and timing should be perfect or the cheese will melt and the dosa will turn soft,” says Chef Abdul Kader, the creator of all these preparations. If you are really hungry, the best bet would be a szechwan chicken spring roll dosa or maybe a malabari prawn dosa which is dosa stuffed with masala fried prawns, nothing less than mouthwatering. “The dosa can go with anything, except maybe fish or squid,” says Kader. Thus there are dosas with prawn, chicken and beef stuffing in Chinese, Thai, South Indian and North Indian flavours. The Chettinad koli dosa and Andhra chicken dosa with their distinct flavours are the ones much in demand now. Kader has worked up a menu of more than 25 different varieties at the fest, which has now become an yearly affair. “We use only authentic spices for every item,” he says. “One of these dosas is a meal in itself, especially in the case of cheese and non veg dosas,” says Santosh S, restaurant manager. “Dosa is no longer a breakfast item.” Vegetarians can have their fill with paneer bharta dosa which has a lavish dose of grated paneer as stuffing or the capsicum and mushroom dosa. The szechwan cheese dosa with grated cheese is a bit heavy but lovers of cheese will find it divine. The dosas are served with a special chutney which could be mint, onion, dates or even cauliflower. However, you might not need these chutneys for once, as the stuffings take up all your attention. There is a little something for the health freak as well - uthappam with bean sprouts.The fest is on from 4 pm to 11 pm, till July 10. The treats are priced between Rs 55 and Rs 110. Hop in and fall in love with the dosa all over again!
