The preparation starts with the vendor cutting huge blocks of Amul cheese into cubes which are then shredded over bowls filled with a creamy, buttery gravy. More cheese cubes are added on top, followed by a drizzle of cream, overloading the dish with cheese. While many might wonder who would eat such a cheesy dish, Amar’s voiceover explains that people in Surat love it so much that there is often a one-hour wait to try it.
