How to Rescue Stale Hard Cheese
Stale hard cheese can be fixed as follows.
Steps

Scrape off any mould that has grown on the cheese.

Dip a clean cloth into a solution of strongly salted water.

Wipe the cloth over the cheese.

Allow the cheese to air dry.

Return the cheese to a clean container for continued storage. Place in the refrigerator. The salt will prevent the growth of any more mould.

If you find that this doesn't work, and the cheese is still hard after removing the mold and wiping it down, it can still be used as follows: Allow the cheese to dry thoroughly. Grate the cheese finely. Use the grated cheese in cooking. It can be refrigerated or frozen until needed.
